1.5-2 pounds of frozen fruit (or fresh)
1.5 cups honey or maple syrup OR 3/4 cup sugar
2 T lemon juice
(optional spices as you like. Also you can vary the sugar and lemon juice based on taste and/or the fruit you use).
To Thicken: 1 part cornstarch to 1 part water (mix together first)
Add fruit, sweetener and lemon juice to instant pot.
Cook at high pressure for 2 minutes.
Then use immersion blender or spoon to smush to desired consistency.
Then thicken with 1 part cornstarch and 1 part water mix, while bubbling. Repeat or increase as needed to get to desire consistency.
Will thicken as it cools.
Transfer to small mason jars and keep in the fridge after the first couple days/week. Keeps for a long while in the fridge.
