Pumpkin Chocolate Chip Muffins

  • 1 1/2 c. sugar
  • 1/2 c oil
  • 2 eggs, lightly beaten
  • 16 ounces canned pumpkin
  • 1 3/4 c flour
  • 1 t salt
  • 1 t baking soda
  • 1/2 t baking powder
  • 1 t nutmeg
  • 1 t cinnamon
  • 1/3 c water
  • 1/4-1/2 of a bag of chocolate chips
Preheat oven to 350. Use cupcake liners (or grease pan). Stir together sugar and oil, then eggs and pumpkin. Dump dry ingredients into a mound on top of the wet ones. Stir with finger. Then mix all together. Add chocolate chips. Using spoon or ice cream scoop ladle into muffin tins 2/3 full.
Bake for 20-30 minutes.
