Wancakes

  • 3 eggs
  • 1 3/4 cups buttermilk
  • 1 stick of butter
  • 1 t vanilla
  • 1 3/4 flour
  • 1 1/2 t baking powder
  • 1 t baking soda
  • pinch of salt
  • 1/3 c sugar
Whisk egg yolks, buttermilk, melted butter and vanilla. Dump without mixing in the middle of the bowl flour, baking power, baking soda, salt and sugar. Stir with finger the dry ingredients. Then mix all ingredients. In another bowl, whisk egg whites until stiff peaks. Then fold into other mix.

Cook like pancakes or in waffle maker. Make lots and freeze, they taste better in the toaster.
