Aloo Gobi

Time; about 30 minutes
Ingredients:
  • 2-4 potatoes peeled and cut into small cubes (you can substitute with extra cauliflower)
  • 1 bag frozen cauliflower/1 head cut into pieces.
  • 5 T oil
  • 1 t ground coriander
  • 1 1/2 t ground cumin (we like to toast our cumin before we ground it)
  • 1/4 t tumeric (can omit)
  • 1/2- 1 fresh hot chili pepper (can substitute with ground cayenne pepper)
  • 1 t salt
Heat oil. Add salt and some of the cumin, then add potatos. Cook without stirring until they brown nicely. Then cover pan and cook about 5 minutes until potatoes cooked through. Add cauliflower and remaining spices, add a little water and cover. Cook to desired consistency

Veggies for kids: Kids usually don't mind the cauliflower in this dish, but if you cut it in small pieces, it looks like potatoes. Also you can make this dish and then mash or whip it, this throughly disguises the cauliflower.
