coleslaw with Pimento Olives

Ingredients:
  • 1 small head cabbage, chopped
  • 3-6 T mayo
  • 1 jar or less pimento olives with juice, finely chopped
  • salt and pepper to taste
Directions:
Put chopped cabbage in large bowl. Add mayo until desired consistency is reached. Add 2/3 of chopped pimento olives and 1/2 juice. Add more to taste. Then finish with salt and pepper. Chill.
