Homemade Chicken Soup

Time; This will take about 2 hours. I like to set it up after dinner and then watch a movie, stopping once or twice to strain or add stuff.

Ingredients:
  • Roast your own chicken OR buy a rotisserie chicken from the store
  • Water
  • 1/2 stalk celery chopped
  • 5 carrots, chopped
  • Greek Seasoning/Italian seasoning or a no-salt version.
  • noodles/rice
  • Optional;
    • other veggies; spinach, corn, potatos, etc.
    • other seasonings/fresh or dried herbs
    • canned beans
    • this is a good place to use leftovers from the fridge
    • just don't put too much in or you'll have more stuff then broth
Directions:
1. Pick the meat off the chicken.
2. Put what is left in a soup pot and cover with water.
3. Add 1/2 the celery, carrots and a couple t of seasoning.
4. Bring to boiling, then simmer for 1-2 hours.
5. pour through strainer and discard everything but the broth.
6. Pour broth back into soup pot.
7. Add remaining celery, carrots, any other veggies.
8. Cook for 15-30 minutes.
9. Add mores spices, salt and pepper to taste.
10. Add noodles or rice and cook for about 10 minutes more.
