Ingredients:
- 1 lb ground beef
- 1 onion finely chopped
- 1 clove garlic minced or pressed
- 2 slices of bread, chopped and soaked in liquid (can use gluten free bread)
- 1 tsp salt
- pepper
- 1 T soy sauce
- 1 c cooked rice
- 1 small can of tomato juice or V-8
- 4-5 green peppers
- 1-2 tomatoes sliced
- 1 small can of broth
- water
- cornstarch for thickening
- pinch of sugar
Preheat oven between 350 and 370 degrees. combine ground beef, onion, garlice, bread, salt, pepper and soy sauce into a bowl. Stir in rice. Add tomato juice to moisten. Cut green peppers in half and clean. Stuff pepper halves with meat filing and top each with tomato slice. Place stuffed peppers in roasting pan (peppers should fit snuggly). Add broth and enough water to reach 2/3 height of peppers. pour remaining tomato juice over green peppers. Cover with foil and bake 1 hour. Uncover and bake for an additional 30 mintues. Remove green peppers from pan and reduce liquid to desired consistency. Thicken with cornstarch (mix first with water and then into sauce). Add a pinch of sugar and season with salt and pepper.
