- 1-2 lbs chicken, cut into pieces and browned or
- 1 rotisserie chicken, meat off and into pieces.
- 1 onion, chopped
- 32 oz chicken broth
- 2 cans (4 oz) green chillies
- 2 cans white beans (Great Northern)
- 3-6t ground cumin
- Optional;
- add sliced carrots, celery or other cookable veggies
- Homemade broth with rotisserie chicken-Just put chicken in soup pot, cover almost to the top with water. Bring water to a boil and then simmer for 1 hour or until it smells lovely. If you feel adventurous add carrots, celery, salt and Italian spices or Greek seasoning. Then pour through colander to get clear broth. then pick off pieces of chicken for the soup.
- serve with shredded Monterey jack cheese.
Cut chicken in bite size bits. Throw everything into soup pot and bring to boil, then simmer for 30-60 minutes.
