- 1-2 T olive oil
- 3-8 cloves garlic, chopped
- 5 t roasted cumin seeds
- 1 c small lentils 9red or green
- scant 1/2 t turmeric
- 3 1/4 t salt
- 5 c water (use less if you want the finished dal less soupy)
- 1/2-1 bunch green onions
Heat oil in large pot over medium heat. Add garlic and brown very lightly. Add lentils. Quickly pour all 5 cups of water into pot. Then add cumin, turmeric and salt. bring to a boil on high heat and then heat to medium and simmer for 30-35 minutes. Meanwhile, cut green onion into 1-1 1/2 inch slices. then cut those in half lengthwise. When the lentils are almost done, add green onions and cook for 2-3 more minutes. (taste lentils every couple minutes after 25 and stop cooking before they get too mushy).
