salad nicoise

Ingredients:
  • hard boiled eggs, peeled and cut in 1/4s.
  • string beans cooked
  • steamed baby red potatoes, cut in 1/2
  • 1 can of tuna in olive oil (usually Italian) (can used grilled fresh tuna)
  • tomatoes cut in quarters
  • artichoke hearts
  • black olives
  • optional;
    • sliced onions
    • lettuce
    • Parmesan
Directions:
cook ingredients ahead of time and serve on platter cold. Drizzle with an Italian dressing or olive oil and some spices. Season with salt and pepper.
