- 1/2-1 t ground cumin
- 1 medium leek, sliced into thin circles (can substitute onion)
- 1+ T butter
- 2 c broth
- 1 potato, peeled and cubed
- 1/2 of a kielbasa (can substitute brats or other sausage)
- 1 T heavy cream (can omit or use milk)
- 1 package of frozen spinach thawed/cooked (can use fresh)
Saute leeks in butter. Add cumin. Then broth and potatos, kielbasa, spinach. Simmer for 15 minutes or so. Then add cream and salt and pepper to taste.
