Leek, Potato and Sausage Soup

Ingredients:
  • 1/2-1 t ground cumin
  • 1 medium leek, sliced into thin circles (can substitute onion)
  • 1+ T butter
  • 2 c broth
  • 1 potato, peeled and cubed
  • 1/2 of a kielbasa (can substitute brats or other sausage)
  • 1 T heavy cream (can omit or use milk)
  • 1 package of frozen spinach thawed/cooked (can use fresh)
Directions:
Saute leeks in butter. Add cumin. Then broth and potatos, kielbasa, spinach. Simmer for 15 minutes or so. Then add cream and salt and pepper to taste.
