Grandpa Dick's Italian Goulash

Grandpa Dick learned this dish from fellow shipyard workers during world war II.

Ingredients:
  • 3-5 lbs pork ribs (riblets are ideal) cut 1 1/2 inches wide
  • 2 large cans of whole tomatoes, coarsely chopped
  • 2 large onions, chopped
  • 6-8 cloves garlic, minced
  • 1 jar hot cherry peppers with liquid, stems removed and coarsely chopped
  • salt and pepper to taste
  • 1 package elbow macaroni (can use gluten free), cooked
Directions:
Brown pork in large saucepan. Add tomatos, onions, garlic and hot cherry peppers (including juice). Cover and cook at a low simmer 4-5 hours until meat almost falls off the bone. Add salt and pepper to taste. Serve over noodles.
