Ingredients:
- 3-4 c broth
- 4 T butter/oil/margarine
- 1 onion chopped
- 1 clove garlic minced
- 1 1/2 c risotto rice (arborio, carnaroli or Baldo are risotto rices, but you can also use any short-grained round or semi-round rice).
- 1 c water
- 1/2 t salt, 1/4 t pepper, more or less to taste.
- optional;
- 1/2 c grated Parmesan, more or less to taste
- spinach, fresh or frozen
- sausage, cut in pieces
- etc.
First, warm the broth on the stove in a sauce pan on medium. In another pan, cook the onions and garlic in butter. Then add the rice to the onion mixture. Then add the water. Let the water come to a boil. Then add 1/2 cup of the broth at a time, stir about every 3-4 minutes. Then repeat when the broth is mostly absorbed. When firmly cooked through (taste when it seems ready). Add salt and pepper and other optional ingredients (except cheese). Add cheese just before you serve this dish.
*veggies for kids. This is a great dish to add spinach (if your kids will eat their food with green) or other veggies pureed (pumpkin, cauliflower, carrots etc.). Kids love this dish, it tastes like macaroni and cheese.
