No-Tomato Sauce

Time; 15 minutes

Ingredients:
  • 1/2 onion sliced
  • can of pureed pumpkin
  • The juice from a can of beets
  • Italian spices
  • salt and pepper
  • oil
  • Optional; vinegar/lemon juice
Directions:
1. Saute onions in oil until translucent.
2. Add the can of pureed pumpkin.
3. Add the juice until the color of the sauce looks redish. Be careful about adding too much.
4. Cook for about 5 minutes on medium heat.
5. Add Italian spices and salt and pepper to taste.
6. If you want the acid taste of real tomato sauce, add small amounts of vinegar or lemon juice to taste.
