Lime Cashew Rice Pilaf

An adaption of Raghavan Iyer's recipes*
Ingredients:
  • 1 c basmati or long grained rice
  • 1 1/2 c water
  • 2 T oil
  • 1 t black or yellow mustard seeds
  • 1/4 c+ of raw whole cashews
  • 1/4 c lentils (cooked but slightly firm, green is prettiest)
  • juice of 2 limes
  • 1 t salt
  • 1/4 t turmeric
  • 1 clove garlic chopped
  • 1/2-1 c currents or raisins
  • 3-4 stalks green onion, chopped
  • 1 handful fresh coriander or mint chopped
Directions:
Cook rice with water (1 part rice to 1 1/3 parts water. Boil, then simmer covered for 30-45 minutes). Add oil and mustard seed to large pan and cover. THEN turn on heat and wait until mustard seeds start popping. When they stop (about 1 minute) then add remaining ingredients including cooked rice.
