Chinese Chicken Soup

Ingredients:
  • bones from roasted chicken (or substitute broth)
  • 2-5 cloves garlic smashed
  • 1-3 slices ginger
  • 1-2 cups brown rice
  • 1/2-1 head Chinese cabbage (can substitute regular cabbage)
  • Green beans, cut into 1 inch slices
  • 1-2 carrots, shredded
  • 1 package of mushrooms (can use black mushrooms or shitake)
  • soy sauce, salt, pepper to taste
Directions:

1. Cover chicken bones with water and add garlic and ginger. Boil for 1-2 hours. Then remove bones.
2. Or add garlic and ginger to store broth and simmer.
3. Throw in all remaining ingredients (except soy/salt/pepper).
4. Cook for 15 minutes or until it tastes done.
5. Add soy sauce, salt, pepper to taste.
