Chicken Chili

Ingredients:
  • 2 lbs chicken, cut into 1 inch pieces
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1/2-1 t crushed chili peppers or 1/4 t cayenne pepper
  • 2 t chili powder
  • 1-2 t dry cilantro
  • 2 t chopped garlic
  • 2 c broth
  • 1 can garbanzo beans
  • 1 c kidney beans
  • 1 large can tomato sauce
  • 1 can diced tomatoes
  • The juice of 2 limes
Directions:
Brown chicken in oil in a soup pot. Add remaining ingredients. Bring to boil and simmer 30 minutes. Add salt or pepper to taste.

Optional: serve with grated cheddar cheese, chopped onions, sour cream, chips, cornbread.
