Ingredients:
- 2 Cucumbers, thinly sliced (I like to make one cut from outside to the center of the cucumber, this makes them curl more in the salad).
- 7 T rice vinegar (can substitute regular vinegar)
- 1/3 t salt
- 2 T sugar
- 1/2 t soy sauce
Combine vinegar, sugar and soy sauce and stir until sugar is dissolved. Toss cucumber slices in dressing. Chill for awhile.
