Kit's Curry

Ingredients:
  • 1 whole chicken cut into parts
  • 5 or more T curry powder
  • 2-3 onions, diced
  • 2 cloves garlic, chopped
  • 1-2 cans chicken broth
  • milk or yogurt for thickening (optional)
  • Lime juice to taste
  • Optional/condiments-
    • spanish or regular peanuts
    • chopped scallions
    • currants or raisins
    • Major Grey's Mango Chutney
    • Fresh slice bananas, sprinkled with nutmeg and lemon juice
    • Plain yogurt with sliced cucumbers, salt and cumin powder
Directions:
Sprinkle chicken generously with curry powder. In a very large pan, brown chicken in oil. Remove chicken from pan. Brown onions and garlic in oil. Add about 3 T curry powder and brown slightly. Turn heat down and add enough broth to almost cover chicken. Retrun chicken to pan and cook uncovered at a low simmer until done, approximatley 30-40 minutes. Remove chicken from pan and reduce broth until about 1/2 original amount. Add a small amount of milk or yogurt (if desired) and lime to taste.
Serve over basmati rice with desired condiments.
