Ingredients:
- 1 lb navy beans
- 1 t dry mustard
- 5-6 T molasses
- 1 onion, whole
- 1/4 lb salt pork
- 1-2 t salt
- pepper to taste
Soak beans overnight in pot. Drain beans and refresh water. bring beans to boil and simmer 30 minutes. Beans are ready if skin peels when you blow on them. Drain beans again. Preheat oven to 275 degrees. place beans in oven-safe pot or dish. Add dry mustard, molasses, onion, salt pork, salt and pepper. Cover and cook for 5 to 7 hours. Check every couple of hours to make sure that there is enough liquid left. Uncover beans and cook for one more hour.
